Vegetarian French Onion Soup

I love French onion soup…Funny thing is I only discovered it about 6 months ago. Now it is pretty much my go-to when eating out and looking for a lighter meal. It’s warm, savory, and delicious!

 

I tried making it myself, and I am happy to say it turned out damn good! This recipe is adopted from about 3 different ones that I looked at online. SO simple and CHEAP! 

 

Ingredients: 

·     About 3-4 pounds of onions (I did ½ red, ½ yellow)

·     3 tbsp butter

·     4 cloves of garlic, diced

·     2 tbsp balsamic vinegar or red wine

·     salt & pepper

·     2 bay leaves

·     4 cups veggie broth (traditionally beef broth is used)

·     4 cups water

 

 

Directions:

1.    Slice onions thinly, about ¼ inch thick. I wore ski googles because I knew I couldn’t get through cutting that many onions without bawling my eyes out. 

2.    In a large stock pot melt butter over medium heat, add onions and stir occasionally for about 20 minutes.

3.    Reduce heat to medium low, add garlic, bay leaves, and balsamic vinegar, allow to cook for another 40 minutes stirring occasionally. 

4.    Mix in veggie broth and water. Add salt and pepper to taste. Bring soup up to temperature, and it is ready to eat!

 

Traditionally served with some crispy French bread with Gruyere or Swiss cheese melted on top. Or if you are like me and just have some shredded mozzarella, it’ll do the trick.
